BRAMBLE – The brambles we gather in from various different locations as good as I can get them, and it always works out fine by the end of the season. I have to be a nuisance in the pursuit of the best though.
Mashed up with boiling water to release the flavour and the colour, then blended with sugar syrup for yeast food, there is an initial fermentation on the crushed berries, then it is strained and the juice is allowed to ferment out to dryness. The finished wine is a little excitable on its own so we blend it with some sensible Oak Leaf wine to bring it down to earth and give it a drier finish.
Good with food or to finish off the day. 13.5% vol
