AUTUMN OAK LEAF – We start picking leaves for this wine in September; out in the woods in autumn it’s not a bad job is it? Judith comes out to pick up the early morning batch and takes them into the winery. The leaves are steeped in boiling water. Next day the tea is strained and some sugar and some fruits are mixed in, grape yeast is added and before you know it, or not long after, the fermentation begins.
When the sugars are all used up fermentation ceases and the wine slowly clears, then to be bottled, laid on its side in the dark until it’s ready to drink. Twist my arm and I’ll say it tastes like slightly musty Granny Smiths and some other things; it tastes beautiful and for a while after it is gone. You can serve this one round the table especially good with lamb and other lighter meats and fish probably. Serve chilled 13.5% vol
